It’s Colorado Mead, Honey!!!

Actually… it is both! Colorado Mead AND Colorado Honey.

My article with photography about Honnibrook Craft Meadery (in Castle Rock, CO) using premium Colorado honey from Lockhart Honey Farms for award winning success is now posted on The Fence Post magazine’s website.

DJ Kurtz (foreground) and Michael Fagan, co-owners of Honnibrook Craft Meadery in Castle Rock, CO, discuss their mead making process while premium monofloral Colorado honey from Lockhart Honey Farms flows from a 55-gallon drum into a tank that will blend the honey, water, yeast and other nutrients as it is pumped into large vats to create a new batch of craft mead. Open since 2019, Honnibrook has picked up numerous awards for its “light and refreshing” style of mead.

I had a great time talking with Kurtz and Fagan, as well as Leo and Laura Lockhart, for the article. Many thanks to all four for their courtesy and generosity with their schedules.

My article with photos regarding the CSU Spur campus construction occurring as part of the massive National Western Center expansion and renovation in Denver, CO is published online on the website of The Fence Post magazine, and should be out in this upcoming Monday’s print edition.

In a September 2021 photo taken from the roof of CSU Spur’s Terra building, the view takes in the nearly completed Vida building in the foreground that is scheduled to be open and ready for tours during the upcoming January 2022 National Western Stock Show. To the left of the photo is a corner of the Hydro building that is under construction and will be finished later in 2022.

CSU Spur Construction

I have an article submitted that should be published soon about the construction on the three buildings comprising the CSU Spur campus located on the grounds of the National Western Center in Denver, CO. One is the Hydro building, which will be focused on water education, research, and issues.

An exterior shot of CSU Spur’s Hydro building under construction in September 2021. According to CSU Spur spokespeople, the Hydro building has connectivity down to the river and lots of flexible programming spaces. On the right side of the building is the start of what will be a signature circular staircase that is symbolic of a river eddy.

Another building is the Terra building, which will be focused on education, research, and issues regarding land and agriculture.

Amid the ongoing noise and activity of heavy machinery and construction, CSU Spur Director of Education Kathryn Venzor (foreground, left) describes the construction progress and purposes of the campus to a group touring the site. The building under construction in the background is the exterior of the Terra building, which will focus on land and agriculture.

The third building is the CSU Spur Vida building, which will be focused on human and animal health. Vida should be complete and ready to tour by the time the upcoming National Western Stock Show arrives in January of 2022. But that image will be a separate blog post in the future!

Credit Where Credit is Due…

I made an earlier post about Honnibrook Craft Meadery in Castle Rock, CO making “award winning” meads. In this day and age of hyperbole over substance, I thought it might be best to show one of their awards in a separate post.

Honnibrook Craft Meadery co-owners Michael Fagan (left) and DJ Kurtz (right) stand proud behind their “Commercial Wine 2021 Best of Show” award earned at the 2021 Colorado State Fair. The duo’s Peach Habenero mead beat out wineries and wines from all over the state of Colorado to pick up the big win.

Kurtz and Fagan are a pair of great guys who love making mead. You can taste that passion in everything they produce. I believe the 2021 Colorado State Fair wine competition judges tasted it, as well.

I am looking forward to writing an article in the near future about Fagan and Kurtz and their use of Colorado honey to create their mead. I am just getting some additional interviews and taking a few more photos!

CALF Gives & Receives

I have a new story with photos published about the Colorado Agricultural Leadership Foundation’s (CALF) Legend of Agriculture Dinner and fundraiser that took place at the beginning of October. Great organization and great mission.

The story and photos are on The Fence Post magazine’s website, as well as in their upcoming print edition.

Speeches and presentations were made while food was served up during the 2021 CALF Legend of Agriculture Dinner honoring Tim Lowell on Friday October 01,2021.  The food consisted of samples of CALF raised pork, along with desserts for the nearly 200 attendees of the dinner and auction fundraiser for the Castle Rock, CO agricultural organization.  Between the dinner, the auction, and a matching donation, over $100,000 was raised to support CALF's mission.

All I Mead is You!

Pun-tastic headline aside, I learned a ton about mead this weekend as I spent time with the co-owners (Michael Fagan and DJ Kurtz) of a Colorado craft meadery in the town of Castle Rock who are making a name for themselves and their fast growing business: Honnibrook Craft Meadery.

Right now, I am in the beginning stages of putting together a magazine article about Honnibrook and its use of Colorado sourced honey to create their award winning meads. Kurtz and Fagan approach making their mead differently than most producers (i.e., 6.2% alcohol vs 10+% of most meads) and their techniques are also different. Their unique craft brewer approach is paying off with awards and surprising (in a good way) growth.

Fagan (right) is next to a 55-gallon drum of Colorado-sourced honey that is being pumped and mixed with water and other ingredients to send to the fermentation tanks in order to create their award winning mead.

Fagan and Kurtz are two really nice guys who are incredibly passionate and enthusiastic about what they are doing and it shows in their product. They refuse to let anything get to the consumer that does not meet their own high approval standards for their mead. It was a lot of fun to interview them and take some photos while they were creating a new batch. I look forward to putting the article together.

I had the opportunity (and good fortune) to be able to talk with a couple of great Colorado guys who have started a Mini Bull contracting operation. Best friends Duncan Cornell and Cory Hazen are good family men and Christian guys who used to bull ride and now own Bijou Buckers Mini Bulls out of Simla, CO.

It is about the always entertaining rodeo clown, JW Winklepleck, and his thoughts on entertaining a packed house during the 2021 Elizabeth Stampede Rodeo in Elizabeth, CO.

Wearing his typical fashion, Colorado-based rodeo clown JW Winklepleck banters back and forth with the rodeo announcer during a comedy skit to entertain the sold out Sunday afternoon crowd at the 2021 Elizabeth Stampede Rodeo.

In my opinion, after covering a lot of rodeo performances over the last 15+ years, JW is one of the funniest and most spontaneous rodeo funnymen I have had the pleasure of watching.

The Fence Post magazine has published my full article and photos on their website (and soon in their print edition) about the upcoming 2021 Elizabeth Stampede Rodeo (June 03-06) in Elizabeth, CO.

Elizabeth Stampede Rodeo president Traci McClain took the time to sit down and talk with me during one of their volunteer work days at the rodeo grounds. It was rough for them to have to cancel 2020’s rodeo, but they are really looking forward to starting it up again this year.

Former PRCA world champion Kelly Timberman not only won the 2017 bareback competition with this 87.5-point ride aboard Summit Pro Rodeo’s “Revolving Door;” he also shattered the Elizabeth Stampede Rodeo’s previous arena record of 86 points.

A Life Untamed (Cowboy Poetry)

Sitting here watching the thermometer hover at zero degrees today brought to mind the toughness and spirit of the cowboys who used to drive the massive cattle herds to market rain, sleet or snow in the old west.  Then I caught myself, because contemporary cowboys are still working the massive cattle herds no matter what mother nature throws their way.

This cowboy poem of mine is dedicated to cowboys past and present and was published in 2005 by the good folks at CowboyPoetry.com.

Dedicated to the working cowboy – past and present

The western trails bore Longhorn,
Over oceans of grass Plain,
And Cowboys rode like captains,
Through the waves of sun and rain.

4-inch brims and rowelled spurs,
Along with chaps and Latigo,
Matching leather on face and saddle,
Of a seasoned, working pro.

Some say the era of the Cowboy,
Is but a faded dream at best,
But that independent spirit,
Remains the heartbeat of the West.

Miles removed from concrete jungles,
On open vistas kissed by sun,
Modern Cowboys ride the range,
Just like those days the West was won.

So word and song is raised in honor,
To everyone who bears the flame;
Who stokes the fire of admiration,
For a life no one will tame.
